This is the prime cut of the Herdwick Hogget, tender yet full of flavour. This wonderful cut of Herdwick loin is taken off the bone for easy carving. It can be roasted and served pink, the sweet soft meat is tender and delicious.
Herdwick sheep are Lakelands’ native sheep breed, they eat a natural diet of fell grasses and heather.
This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
Our Weekly Market Herdwick Hogget is farmed by Jon Watson at Yew Tree Farm, Cumbria. Herdwick Sheep grown slowly on the fells, on a natural diet, are at the perfect size between 1 and 2 years of age. This Hogget is both tender and rich in flavour.
