The top of the leg of Salt Marsh Lamb is the prized leg fillet with a high meat to bone ratio. The lambs have grazed on the coastal salt marshes of the beautiful Morecambe Bay, for a distinctive, sweeter flavour due to the wild herbs and grasses, such as samphire and sorrel. The leg fillet has a unique, tender texture and rich, natural taste and deep flavour.
Cockerham Salt Marsh Lambs thrive in this unique environment and produce a larger than average cut of prime meat. Therefore whilst the price of the leg joints may seem higher this is because the size of the joints are larger.
Our Weekly Market Salt Marsh Lamb is bred, reared and butchered by Stuart & Caroline Lawson of Cockerham Salt Marsh Lamb. Their family have farmed on the Morecambe Bay Salt Marshes for over a century.
Stuart says, "Salt Marsh Lamb is recognised as a delicacy in Europe, the subtle flavour, taste and texture of the meat derives from the diet of the lambs that graze the marshes which are regularly washed by the sea and full of herbs such as sorrel and samphire. The taste of the meat is far from salty but is light and sweet."
