Mangalitsa Pork Belly
Although sadly Alternative Meats cannot present this cut of belly with the skin intact, it is really a completely luxurious and rich piece of Mangalitsa pork.
They make their streaky bacon from this cut and it is absolutely lovely. The fat is, of course, the star of the show – it’s a real flavour bomb and will enhance anything you put with it.
A long slow cook will product the maximum amount of course, and you can then pour it through a sieve and keep it in your refrigerator.
