Wildflower Sparkling Mead
Wildflower sparkling mead brings forward lovely floral aromas of Northumberland wildflowers from an almost clear and bubbly appearance, reminiscent of the clear and fresh babbling brooks of Northumberland.
Not surprising when learning that Wildflower sparkling mead is crafted only from wildflower honey produced by Northumberland Honey Co and Northumberland spring water. Taking 18 months to produce a bottle, created following a primary fermentation of honey and spring water, with a secondary fermentation inside the bottle which mimics the age old Champagne method of production.
Small delicate bubbles are created from a minimum of 9 months aging on the lees during the methodé traditionelle method of production.
