Smoked Salmon trimmings are literally the smoked Salmon which gets trimmed off the smoked salmon sides. They can include darker meat but are perfect for pates and terrines. They are not as aesthetically pleasing as the smoked salmon packets but the taste does not differ. The delicious smoked Salmon is sourced from waters off the West Coast of Scotland and smoked in kilns for 12-18 hours using highest quality wood chip and saw dust, giving it a reknowned flavour.

Minimum Weight 200g.

Serving suggestion: The smoked Salmon is ready to eat, simply remove from the fridge an hour before serving. This cut does lend itself to use in Quiches, Terrines and Pasta dishes.

 

Our Smoked produce is from Port of Lancaster Smokehouse, a family business run by John & Patricia Price and their son Michael.

Michael says, "Smoked Scottish Salmon has been the smokehouse's core product for the last 40 years, but we also hot and cold smoke all types of meat and fish products in the traditional manner, adding nothing but salt, smoke and time.  It is time that is the vital ingredient. We have the shortest time from catch to smokehouse for the best quality, and combine this with a slow smoking process to give sumptuous flavour and texture."

The Port Of Lancaster Smokehouse is a family run business using traditional methods to produce a vast array of smoked produce. It is based on the Lune Estuary in the small village of Glasson Dock.
