Lumpfish roe is produced from the lumpfish, which matures more quickly than a slow-growing and large fish that results in more expensive and rare sturgeon caviar. It is a less expensive alternative to sturgeon caviar but has a similar flavor, making it a more conscious choice since sturgeon is an endangered species.
