Herdwick Hogget Shoulder Boned and Rolled
A wonderful roasting joint that lends itself to slow cooking. Deep rich flavours and wonderful gravy. The Herdwick Hogget Boned Rolled Shoulder meat is delicious sweet and rich in flavour, when cooked slowly all the connective tissue and marbling melts and creates an eating sensation. The cut is de-boned for ease of carving.
Herdwick sheep are Lakelands’ native sheep breed, they eat a natural diet of fell grasses and heather. ‘Hogget’ is sheep meat from an animal between 1-2 years old and is a delicious cross between tender lamb and full flavoured mutton.
This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
