This Herdwick Hogget Shoulder on the Bone is a sensation when cooked long and slow; it can carry strong flavours and yet is delicious in its own rich juices. It falls off the bone and is succulent and moist.
This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
Our Herdwick Hogget is farmed by Jon Watson at Yew Tree Farm, Cumbria. Herdwick Sheep grown slowly on the fells, on a natural diet, are at the perfect size between 1 and 2 years of age. This Hogget is both tender and rich in flavour.
