This Herdwick Hogget Shoulder on the Bone is a sensation when cooked long and slow; it can carry strong flavours and yet is delicious in its own rich juices. It falls off the bone and is succulent and moist.
Herdwick sheep are Lakelands’ native sheep breed, they eat a natural diet of fell grasses and heather. ‘Hogget’ is sheep meat from an animal between 1-2 years old and is a delicious cross between tender lamb and full flavoured mutton.
This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
