This Christmas cheese selection contains:
St Andrew’s Cheddar. Unpasteurised cows’ milk. 250g.
Jane Stewart makes cheese with rich, unpasteurised milk from her husband’s cattle. This Cheddar is classically Scottish in style: aged for 14 months, it is powerful, strong and tangy – a real sharp traditional Cheddar.
Yoredale (Old Roan) Wensleydale. Unpasteurised cows’ milk, vegetarian. 250g.
Made by Ben and Sam Spence using fresh milk from local cows, they make an old-fashioned Wensleydale cheese, not quite as crumbly as its modern relations, with a fresh, sharp yet light flavour and supple creamy texture.
Baron Bigod Brie. Pasteurised cows’ milk. 250g.
Sold only when perfectly ripe, this modern creation is Britain’s finest example of a Brie made in a traditional style. The French will be jealous…
Ragstone. Pasteurised goats’ milk. 200g.
Made by Charlie Westhead in Herefordshire – one of Britain’s first ever goats’ milk cheese, at the forefront of the modern British cheese revolution n the 1990s – French in style with a thin, white brie-like rind to add complexity to the fresh, clean, lactic heart of the cheese.
Sparkenhoe Blue. Unpasteurised cows’ milk. 250g.
Famous for their vintage Red Leicester, the Clarke family diversified further into blue-cheese production when their son Will returned to the farm. Using milk from their 150 cows he decided to develop a classic British ‘rinded’ blue akin to the famous blue cheeses made in the region. The end result is Sparkenhoe Blue – a cheese of its own: mellow blue, with dense-fudgy texture, and a savoury finish.
Quince Paste. 200g.
Classic Membrillo (Quince) paste made in Spain. A great alternative to preserves and grapes with cheese.
Ingredients:
In cheese: Milk, salt, cheese cultures and rennet
In Quince: quince, sugar, lemon juice, Pectine, Citric Acid and Benzoic Acid. Made in an environment where mustard and nuts are used
