Bray Cured was founded in 2021, transforming over a decade of experience in crafting cured sausage and artisan deli meats into a proper business. Three years after starting Bray Cured, they had already been awarded FIFTEEN Great Taste Awards, and the coveted Great Taste Producer mark.
What started in a garden workshop soon outgrew its humble beginnings, yet Bray Cured remain committed to small-batch, handcrafted production. From selecting the finest meat to mincing, stuffing, curing, and drying, everything is done with care and attention. Each batch is unique, shaped by everything from the weather to the hands behind it. Charcuterie is a slow, thoughtful process, and Alex and his team treat every batch with the same dedication as if they were serving it in their own home.
Alex's key team members are Chef Jo and Master Butcher David. Jo's culinary experience is as broad as her smile, and her expertise is key to Bray Cured's pairings, hampers and production. Nobody knows more about combining our meat with local cheese and wine. David has forgotten more about butchery than most butchers working today ever knew. He's a whole-carcass butcher and a wonderful teacher, and a key part of the charcuterie and butchery courses too.
