Like true artisans everything they do is by hand……they cure using only salt and natural air…… their mission is to make the best tasting game and cured meat in the world.
Steve Williams and Pete Woodham-Kay produce fantastic artisan charcuterie including bresaola, salami, Devon fire chorizo, air dried coppa and lomo.
Pete lives on the Powderham Estate in Devon, where he can keep an eye on their rare breed large black pigs, similar in stature to the Spanish Iberico black pigs, which are renowned throughout the world for their Iberico charcuterie.
Steve lives close by, and next door to their famous restaurant “The Pig and Pallet”, where all the meat served is produced by them, as are all the pickles and accompaniments.
Good Game chorizo and salami recipes sometimes come with a twist, depending on the season. All their game produce is wild, shot locally in Dartmoor and Exmoor, most often by them.
Steve learnt to make charcuterie on a course at Hugh Fearnley Whittenstall’s River Cottage in 2012. At the time, he was working in Dubai in recruitment, sat at a computer dreaming of starting a small food business and selling at farmers markets……. Pete worked as a skipper on a commercial yacht.
Steve and Pete have a strong friendship which has seen them through working 7 day weeks without pay! It is clear that they love what they do, and everything revolves around producing the best food possible.
So it is great to see Good Game going from strength to strength, selling their fine charcuterie products throughout the South West and London.
They have won a stack of awards, and are appearing on our television screens with BBC’s Kate Humble: Back to the Land.
