Dà Mhìle Distillery continues its legacy of making great organic whisky and gin while exploring new spirits like Apple Brandy and Sloe Gin…… they have gone from strength to strength with few other distilleries taking a similar grain-to-glass approach and grow their own, let alone use, solely organic materials.
Tucked away in the rolling green hills of Ceredigion County, Wales sits the Dà Mhìle Distillery where father and son team John Savage-Onstwedder and John-James Onstwedder produce their unique organic craft gins, whiskies and liqueurs.
Their mission is to produce high quality organic spirits that will make Wales proud and to ensure their customers consistently enjoy the exquisite tastes and characteristics that have become synonymous with Dà Mhìle spirits.
Distilling at Dà Mhìle Distillery first began in the autumn of 2012, but the story started many years before that in 1992. John Savage-Onstwedder, one of the founders of the renowned Caws Teifi Farmhouse Cheese (also on the MasterChef Gift Card Artisan Network), commissioned the world famous Springbank Distillery in Campbeltown, Scotland to produce the world’s first organic whisky (of the modern era), to commemorate the eagerly anticipated new millennium. Dà Mhìle (pronounced da-vee-lay) is Gaelic for 2000. Of the 15 barrels of organic whisky produced, 5 barrels are still maturing and are much sought after by collectors..
John-James hit the ground running with his first creation, an organic orange liqueur called Dà Mhìle Orange 33, winning a True Taste Award for its first batch!
His second product, Dà Mhìle Botanical Farmhouse Gin was enthusiastically received by gin drinkers, and he went on to release the popular Seaweed Gin which is made with a selection of organic seaweed from the Newquay coast of West Wales and the West coast of Ireland.
