It’s always nice to send a thank you gift, whether someone has helped you move house, let you stay in their home for the weekend or just been an amazing friend, sending cheese to say thanks is always well received.

Thank Ewe is a delightful selection of ewe’s milk cheeses together to say just that.

Manchego, one of the most well-known cheeses around, mellow, nutty and smooth in flavour. A favourite amongst cheesemongers and customers at The Cheese Society and a cheese that is always welcome on any cheeseboard. Pave Cobble, an ash coated sheep’s milk cheese that has the flavour of sweet cream with nutty notes that develop with age. Delicious topped with runny honey. The delivery is completed with locally made sourdough crackers from the Wellbeckhouse Estate Bakehouse and the classic ewes milk accompaniment Quince Paste.

Manchego PDO (12 Months aged)
Weight: approx 200g.

Manchego PDO is one of the most popular and well-known cheeses from mainland Spain with a firm, slightly open textured cheese with a nutty flavour. Aged for 12 months creating an intense depth of flavour and those delicious characteristic calcium crystals which give the cheese that delightful crunch.

Pairing Suggestion - Quince Paste

Pave Cobble
Weight: approx 200g.

A gorgeous little cheese with a unique truncated shape and a soft, springy texture that becomes meltingly creamy with age. Pale silver in appearance due to the cheese being coated lightly in ash to create the geotrichum rind and leave a very subtle peppery undertone, boasting a delicious rind that becomes dominated by blues and greens as it ages. The initial flavours of sweet cream followed by nutty notes and a soft tasting, rich, opulent and smooth flavour - developing more complexity when aged. The texture becomes increasingly silky as the cheese matures. once at its softest, we suggest cutting the top off the pyramid cheese and dipping bread and crackers into the liquid cheese inside like a little mini fondue. 


This individual cheese weighs approx. 200g.

Fourseed Sourdough Crackers
Weight: approx 100g.

Nottinghamshire based Welback Bakery create these crackers from their fresh sourdough loaves, creating a crunchy four seed cracker perfect for cheese.

Pairing Suggestion - Soft Cheeses

Each bag weighs approx 100g

Quince Paste 200g
Weight: approx 200g.

A sweet quince paste, traditionally eaten with sweet Manchego ewes milk cheese as a Tapas in Spain. A delicious accompaniment to most hard cheeses.

Serves 2 People.

Cheeses are cut fresh to order, once cut they have a 12-14 day best before date.

The Cheese Society

Kate O'Meara created The Cheese Society in 1997 supplying difficult to find mainly unpasturised farmhouse cheeses to individuals and restaurant customers. Since then her daughter Lucie has joined the business based in Lincoln, and they run a remarkable Cheese Shop & Cafe.
