Handcrafted by expert cheesemakers, clothbound and naturally matured, typically for 6 months. Crafted from the finest locally sourced goat’s milk. The truckles are cut into 1.5kg pieces and cold smoked for 16 hours using oak chips from trees on the Quicke family estate for a subtle smoky floavour witha nutty sweetness.
