Guanciale | Cured Pork Cheek
This most famous Italian delicacy is highly prized for its flavour and low melt point.
Guanciale is cured pork cheek or jowl, similar to bacon or pancetta, guanciale is much more involved and takes several weeks or even months - it's classed as ready to eat charcuterie meat rather than bacon.
Guanciale is the first choice for making dishes authentic spaghetti carbonara and all'amatriciana. Hold the oil! Proper guanciale is all about the deliciously creamy fat and the flavour it infuses into other ingredients. Try it sliced into tiny cubes with whisked eggs for the most amazing omelette.

Variation in the volume of the product is due to the drying and trimming process. We will endeavour to limit this to an absolute minimum. However please remember this is an artisan natural food delicacy - as it comes!
