Blue Monk is hand-made at the local Monkland Dairy. The cheeses are pierced twice and turned as they mature for around 28 days. They are then wrapped and continue to mature becoming creamier and softer with age. Each cheese weighs approximately 275g and looks great on a cheeseboard. With a lovely developed blue flavour, it's gorgeous and tasty, but not too strong.
